If you haven’t met ceviche before, then it is my great pleasure to introduce you to this sexy Peruvian wonder. If you want to sound like you’re old mates then pronounce his name SIR-VEEE-SSH.There are many reasons to fall in love. Ceviche Recipe
The dressing
1/2 cup good olive oil
2 mandarins, juiced
2 tablespoons mirin
1 tablespoon fish sauce
1 teaspoon sugar
The salad
200 gm tuna (you don’t need to buy sashimi grade, as this refers to how the fish is caught not freshness just ask for the freshest)
200 gm blue eye trevalla (that’s cod in old timer speak)
1/2 fennel bulb or celery if all the fennel is hiding under a rock
1 pink grapefruit
2 blood orange looks and tastes fancy but feel free to use its common cousin the orange orange
3 shallots

For the dressing, mix all of the ingredients together in a jar and shake vigorously. Add salt and pepper to taste. To prepare the salad: mandolin. shave or finely slice the fennel, cut the grapefruit into about sixteen pieces and slice the orange into about eight segments. Gently toss the sliced tuna, trevalla, fennel, orange pieces and dressing together. Arrange on a plate and sprinkle with finely sliced shallots.
