Super tasty and ridiculously healthy ice cream
We’re back from our fortnight camping trip! Yes, it was, ahem, challenging with a three month old and a three year old. This little family would’ve probably bailed on the adventure were it not for the love and help of a certain brother, sister-in-law, niece and nephew who were camping with us. We survived and everyone had a great time, although I think there will be a lot of sleeping around here for the next month. That and eating ice cream…
To celebrate our return to civilisation, electricity and our very own kitchen, we made some ‘ice cream’. The berries were popped in the freezer to save throwing them in the bin on our way out the door to holiday and same with the bananas. This time I was a bright spark and peeled the bananas before freezing them. Yup, I’ve now hit a new level of genius 😉
To make 6 serves
3 frozen bananas
½ punnet frozen blueberries
½ punnet frozen raspberries
½ punnet frozen strawberries
½ cup yoghurt, homemade if you have it
Optional extras: handful of chia seeds, almond meal and/or maple syrup
Blend all the ingredients together. A blender is definitely the way to go. I used a bar mix and it was sloooow.
Add some maple syrup, honey or sugar if it’s a bit tart. We had super sweet berries so I didn’t need any this time.
If you want to make it a bit more substantial throw in some ground nuts or chia seeds. This is perfect when it’s too hot to face eating anything.
